Emulsifier Definition

Emulsifier is a substance that is used to keep an emulsion dispersed thoroughly. Emulsifiers have a hydrophilic and hydrophobic end. By virtue of this property, the emulsifier forms a protective covering around the immiscible liquid droplets and prevents them from clumping together. Emulsifiers are often added in paints.
